Ricardo Koyner - The Farmer Behind the Coffee
The Panama Kotowa Duncan Filter comes from the Kotowa Duncan Estate, Ricardo Koyner's farm. Here he practices regenerative farming, planting native trees and avoiding the use of chemicals to keep nature in balance. This helps the soil and coffee plants stay healthy, which contributes to the special flavors of his coffee. In addition, the volcanic terroir and unique microclimate in Panama's highlands allow the coffee berries to develop a diverse and complex palette of flavors.
A Unique Fermentation Technique
What makes this coffee truly special is the anaerobic fermentation technique (T2) used by Ricardo. This process depends on a special interplay of microflora, including natural yeasts and bacteria, which influence the development of flavor. The coffee berries are fermented in a low-oxygen environment, leading to deep, intense flavors that brew this coffee apart from others. Environmental factors such as temperature and humidity prior to harvest also play an important role in the final flavor. In the case of this limited, the berries fermented 1 night in bags after picking. Then 3 days in the "drum dryer" at 30℃, then in bags for 3 days at 16℃ degrees, and finally another 3 days in the "drum dryer" at 30℃. Although the fermentation process can be influenced to some extent, the exact predictability of the taste always remains a challenge. And that's what makes each batch unique!
Flavor Profile
With the Panama Kotowa Duncan Lot 1873 Filter, you taste tropical fruit notes such as mango, papaya and a hint of citrus. The floral aromas are light and delicate, while the velvety texture provides a harmonious mouthfeel. Almost like being in the highlands of Panama!
