Background:
On the volcanic slopes of Mount Sindoro—the second-highest mountain in Temanggung, Central Java, at an elevation of 1,600 meters—tobacco used to be grown. The farmers made the switch to coffee, consciously choosing a different future: for the soil, for their community, and for quality you can taste.

That quality is also evident in the processing. Only the ripest red cherries are picked. Kojoyo uses double fermentation: a balance between dry and wet. First, three days of anaerobic dry fermentation to enhance the flavor. This is followed by four days submerged in water without yeast, which slows down the process. Together, they produce a controlled result—fruity and complex, but never overpowering. Fermentation is followed by drying: first in the open air, then under a closed dome, with rest periods in between until the correct moisture content is reached. The dried cherries are left to rest for a full month before being hulled and sorted by hand. You can taste the result immediately: chocolate, spices, sweetness, and fruit.

Wahyu Setiono had other plans: he studied theology and wanted to become a priest. Yet he found his calling in coffee. After a breakthrough at a coffee competition in 2019, he founded the Kojoyo cooperative, where quality, processing, and community development take center stage.

Kojoyo works with 250 farmers on more than 100 hectares on the slopes of Mount Sindoro. Through agroforestry, the coffee grows among existing trees rather than in their place. Grass is mowed instead of sprayed, so the soil remains moist, microorganisms can thrive, and the harvest grows stronger year after year.

Under Wahyu’s leadership, Kojoyo—in collaboration with the government—also offers people with a history of radicalization a new future: work on the coffee farms as a concrete path back into society. What once began as an economic recovery project has grown into something much bigger.
