When you open a bag of BOOT coffee, you see an origin, a flavor description and a glimpse of our story. What you don't see are the days on the road. The waiting. The moments when you decide not to do something yet. And it's precisely there (far away from the packaging) that determines why our coffee is the way it is.

For me, coffee is pure attention. It starts with the bean and ends in the cup. Every brewing method brings out different flavors - that continues to fascinate me. I love that play between technique and feeling, and the moment when someone takes that first sip and says, "Wow!!!"

Heavy rains hit our coffee farmers in Panama. 25% of the crop was lost - a reminder that Specialty Coffee is also about resilience and connection.

Autumn has begun. The days are getting shorter, the pace is dropping slightly, and the smell of freshly ground coffee feels like coming home. A great time to mindfully taste what is harvested. And, nice to reflect on how flavors can enhance each other.

Our Brazil Santos is a coffee with notes of chocolate, nuts, brown sugar and stone fruit. So, what do you eat with a coffee like this? We dove into the kitchen with a simple dish anyone can make....

What is your most memorable moment as a coffee professional?
There is no one specific moment right away, but I found it special to discover the path coffee takes all the way through before you can drink it. You don't dwell on that often enough. There are so many people and actions involved: from growing coffee in a coffee country, transporting it to our country, roasting it in our roastery, to everyone wanting to drink, serve or sell it.
