The coffee farmer:

The Kachalu farmers' organization includes more than 100 small coffee farmers working together in the Santander region, in northeastern Colombia. The organization started in 1999. This makes it one of the first projects of the Colombian coffee farmers' organization FNC. Main objective: grow organic coffee combined with care for the rainforest and a decent coffee price for the individual coffee farmers. Boot Koffie has been working with cooperative since 2005.

The plantation and the coffee:

Coffee farmers in the Kachalu region have pieces of land averaging 7 hectares in the protected Kachalu rainforest, located at an altitude of 1100-1900m. The coffee bushes flourish because of the great diversity of natural shade trees, among other things, and fertilization by the more than one hundred unusual bird species that have their home there. This makes the coffee of itself (almost entirely) climate neutral. The coffee from the Kachalu organization has regularly received high marks in coffee competitions and has won many awards for "the best rainforest coffee.

Boot Koffie tastes the coffees annually and buys from the cooperative the coffees that score at least 84 points on the cupping table. Boot Koffie provides an annual premium for the best 84+ coffees, making it worthwhile for coffee farmers to pursue higher quality. Currently, the coffee is even an 85+ coffee.

How is coffee decaffeinated?

Boot pays a lot of attention to this coffee, especially to ensure that the taste remains optimal. Dennis, Barend and Rick test a lot at the tasting table. The great thing is that in no way do you taste that it was made decaffeinated. It is so clean, bright and beautifully balanced: real joy.

Boot deliberately chooses an all-natural and organically certified process for decaffeinating coffee. In 1988, our partner developed a patented process that works using natural carbon dioxide under relatively low temperature and pressure. This particularly gentle process with good caffeine separation through the addition of CO2 guarantees high retention of the coffee components that provide aroma and flavor. Caffeine-free happiness through taste!

The process in brief:

The unroasted coffee goes wet into a sealed vessel. Then, by means of high pressure, CO2 is added causing evaporation. This pressure and evaporation removes the caffeine from the bean and then extracts it. The coffee is then dried again to its original moisture content. No chemicals are used.

Organization:

The individual coffee farmers have their own plots of land and work together in the Kachalu organization. Education is one of the most important things in improving the quality of coffee. Boot Koffie has wholeheartedly supported various projects that contribute to growing better quality coffee and increasing the yield of the land, while at the same time maintaining care for the rainforest. Of particular note is that many of the farmers in the Kachalu cooperative have relatively large tracts of land, 7 hectares on average, compared to the average in Colombia, (1.5 hectares).

Futureproof Coffee Collective:
In the
years 2020 and 2021, Boot Koffie participated with the farmers in the Kachalu cooperative in a pilot with True Cost Accouting (TCA). Calculating the true cost of coffee. Most coffee farming causes a huge environmental impact. Boot Koffie has known for years that growing the highest quality coffee has major positive effects on the coffee farmer's income and reduces the environmental impact. However, the results of the TCA pilot were even far better than Boot Koffie expected:


1. 95% of farmers derive a livable income from coffee farming. A livable income in Colombia is well above the prevailing minimum wage in Colombia.

2. The price that Boot Koffie pays for Kachalu coffee meets the 'Fairtrade Living Income Reference Price' That is generously more than the world market price and fair-trade prices.

3. The True Cost of Colombia Kachalu coffee is very low. A maximum of € 0.50 per kilo of coffee. This means that water use, soil erosion and CO2 emissions cause a 'damage' of up to €0.50 per kilo. By way of comparison: the average coffee in Colombia has a True Cost of € 7.00 per kilo! Boot Koffie more than compensates any remaining environmental impact in the coffee chain through the Climate Neutral Group. This makes the coffee climate neutral.

The name "Colombia Kachalu":

Kachalu means 'hope'. And there is certainly hope! The cooperative clearly demonstrates that delivering top quality coffee goes hand in hand with greater biodiversity, less environmental impact and a better income for the farmer.
