The coffee
Discover BOOT's Mystery Dark Roast coffee. An espresso blend of our Brazil Santos and Colombia Kachalu Organic. These coffees are dark roasted for the specific "Mystery" flavor. We roast the green beans in our own coffee roastery on the special UG 15 coffee roaster. This is because on this roaster we can use a special technique where the roaster allows the coffee to develop briefly in its own smoke.
The roasting process has two expansion moments: the first moment is called the first crack, where the molecules and fats in the bean become so hot that they melt and the bean begins to crack. On the way to this moment, the beans are roasted very carefully. After the first crackle, all gas supply is turned off and the smoke outlet is shut off, allowing the beans to continue cooking in the smoke.
While the computer connected to the coffee roaster accurately measures the temperature, it really comes down to the senses of our coffee roasters Rick & Arnout. They observe the smell of the coffee, listen carefully to the sound of the beans in the drum, and watch the color and texture develop with concentration.
During the final stage, a depth is created in the coffee, bringing out the characteristics of the Arabica bean. This gives the Mystery its unique flavor and is also why Dark Roast lovers choose this coffee.
