Since 2019, we have taken a different path with the Kachalu cooperative with the goal of improving the quality of the coffee and getting a better price for the coffee farmer, based on 84 points or higher. It is a bonus system where the farmer gets more money for his coffee if the quality equals 84 points. The higher the score, the more money the farmer receives. This is how we, together with the cooperative, encourage the coffee farmer to take his coffee to the next level. For two years in a row now, Rick, Barend and Dennis jump 3 meters into the air when tasting the sample. You can clearly taste that the bonus system works and that the coffee is incredibly good as a result.

How can the farmer improve his coffee?

There are many ways for a farmer to improve his coffee. Below you can read about some of the ways:

Focus on the ripe coffee berry

There are (usually) two coffee beans in a coffee berry. Ripe berries have given up all sugars and flavors to the coffee beans through the ripening process. So picking only ripe berries is the goal.

Sorting coffee beans by size

A coffee bean comes from a coffee berry and of course you are dealing with different sized coffee berries. This also influences the size of the coffee beans. If we start roasting different sizes of coffee beans, you get an unbalanced coffee. It is therefore important that the coffee farmer sorts well. This can be done using a Screen Size or a vibrating device.

This is what a screen size looks like:

Reduce the number of defects (broken coffee beans)

Currently, only the 1st class defects have been taken out. 1st class are defects that are very visible. In the next harvest, 2nd class defects will also be reduced. These are defects that are slightly less visible. To reduce these defects, the vibrating machine must be adjusted differently. Vibrations ensure that the defects are separated from the good beans.
After this, another manual sorting takes place.
