Barend Boot as expert on mocha flavor on TV
After the episode at the end of 2018 about "single origin" coffees, the popular TV program "Keuringsdienst van Waarde" dives into coffee again. This time, presenter Marijn Frank takes viewers on a quest about the flavor "mocha". On Thursday, July 11, the episode will be broadcasted at 20:25 on NPO3. Barend Boot, owner of Boot Koffie, tells as an expert in the episode about the origin of the term "mocha" and its origins in Yemeni coffee and the port city of Mocha. Keuringsdienst van Waarde is a Dutch consumer television program broadcast by the KRO-NCRV. The program provides insight into the production of food and other consumer products and tries to separate sense from nonsense in that area. Each episode of Keuringsdienst van Waarde deals with a different subject in a stimulating, inquisitive and tenacious way. At the beginning of an episode, the program's staff members call the consumer information departments of companies. It then reports on the presenters' own research, which examines the industrial production process but especially explains the artisanal process.

Yemeni mocha flavor sensation at Boot Koffie


Boot Koffie purchased a new micro-lot of Yemeni coffee in late November 2018. This year we bought several kilos of Arabica Udaini from coffee farmer Ahmad al Subeih from Sana'a province who grows his coffee organically at an altitude of 2350 meters above sea level. It remains a challenge to be able to export coffee from war-torn Yemen.

Yemen coffee of this quality is a truly unique premium coffee, with all the flavor sensations best brought out by drinking the coffee from a wine glass, according to Barend Boot. "And when the coffee slides into your mouth along with the aromas, that is so special," says Barend. "It's like entering the gates of heaven, so broad in flavor. With notes of blackcurrant, dark chocolate, honey, sweet and juicy and also a punch of spicy umami flavors. Great!".

Attentive hand brewing with a semi-automatic espresso machine and fresh grinding always produces better results. Also great result with espresso pot, push pot or cafetière. Possible to consume with milk. Barend Boot gets a very good result with a Quickmill semi-automat using a slightly lower temperature water (between 88 and 92 degrees), weight in 2 cup piston holder 17 grams of ground coffee is used, with a brewing time of 25-30 seconds, resulting in 41 to 45 grams of brewed coffee out. Serve in preheated cups, double-walled glasses or, even better, wine glasses. Even slightly colder, the fantastic flavor of the espresso will remain surprisingly intact!

The Monk of Mocha is the true, compelling story of a young man pursuing his own American dream, the wonderful history of coffee, and the struggles of Yemenis trying to hold their own in the war.

Mokhtar Alkhanshali grows up in San Francisco as one of seven children of two Muslim immigrants from Yemen. At twenty-four, he works as a doorman in an apartment complex and, after a confluence of circumstances, becomes intrigued by the rich and fascinating history of coffee and the important role his native Yemen played in it.

Determined to restore the ancient glory of Yemeni coffee, he decides to go into the country's rugged mountainous regions in search of the centuries-old plantations, to learn about the cultivation, roasting and trade of coffee.

When he succeeds in winning over local farmers and collecting the best varieties of coffee, success seems within reach, until a civil war breaks out that plunges the country into chaos. Saudi bombs create deserted streets, the roads throughout the country are in the hands of militias, the U.S. embassy closes. Mokhtar must flee the country on his own with only a few suitcases full of coffee, his last hope.
