"Proud" are many, in hundreds of writings this word appears. The word "super" is also often mentioned. It so quickly becomes exaggerated and kretological. Therefore, we at Boot have chosen another term for coffee that we are "s.... t .... " on : Ultra Limited. Ultra Limited means that it is a rare coffee with very scarce aromas and flavors. An "ultimate" experience. And on this Ultra Limited and on the makers, yes I am super proud of that. For many reasons.

PROUD I AM BECAUSE:

This is a real Geisha coffee, a lot of 15 kilos of roasted Geisha, packed in 125 gram bags of espresso and filter. Chosen from 12 lots by Rick Maas. Rick visited the Panama La Cabra plantation with my brother Willem.

This Geisha coffee is roasted on our 1 kilo Giesen roaster by Florian with the help of Kees Kraakman. Kees is my former colleague who started his own business in 2012. Very nice that Kees, 9 years after his departure, is back and helps us with the roasting. But the most important reason to be proud is the fact that this coffee is also inspired and created by my brother Willem J. Boot! And of course first of all that this coffee is so good and through my hands it is a real special family coffee!



WILLEM J. BOOT

That J. stands for Jacob, our father. Jacob started Boot coffee in Baarn almost 50 years ago in 1973.

Brother Willem is co-designer, inspirer of this Geisha coffee Panama la Cabra. In 2004, as an international taster in the final of the Best of Panama, he witnessed the discovery of the Geisha on the tasting table. A desire settled in his heart: "I want to produce this great tasting coffee too". And yes, I do. Seven years ago I walk to his Geisha plantation la Mula high on the slopes at the top of the tree mountain forest. The road up gets wilder and steeper every meter.

Before that, we pass relatively easily through stretches of less steep ground. He then tells something about his first plans on the lower elevation of the mountain. In the following years he and other owners start the plantation la Cabra, the goat. Why a goat, I don't know.

On our coffee travels together I hear about his desires to establish the La Cabra plantation as a social example platage, with very good housing, sanitary and educational opportunities and all biodynamic. Just recently, the La Cabra employees were taught by a well-known biodynamic coffee expert from Mexico. How to make the best natural compost, how to build the compost? Plenty of reasons to be "super proud" of him. Right?


SURPRISINGLY CLEAR AND BALANCED

And now seven years later, the time has come. I have received the La Cabra and have already tasted the filter coffee. It is great. In the past few days the espresso coffee has also been roasted and has come to rest in its packaging.

I'm going to taste it on one of my most faithful test machines at home: the Quick 820 espresso machine. Along with it a good grinder, scale and tamper. You can make the coffee as espresso or lungo.

And you won't believe it ? Will you? I am "s.... t....", (no that is not a four letter word), I am super proud!

There are 15 kilos of this lot, which is 8 x 125 grams per kilo. That's 120 packs, divided into filter and espresso!

RECIPE AND TASTE PANAMA
LA CABRA GEISHA NATURAL ULTRA LIMITED ESPRESSO


Recipe lungo:

18 grams of coffee for the Quick 820.
20 to 25 seconds turnaround time.
Between 70ml and 90ml of coffee.

Tip: The Lungo and Espresso is wonderful as an after dinner drink or paired with dessert for New Year's Eve dinner. Divide the lungo into two wide red wine glasses. The clouds of flowers will caress your nose afterwards. Flavor profile: sweet fruit, cinnamon, noble pure chocolate.

Liesbeth my fellow taster says, "a bed of sweetness, cinnamon and chocolate with lots of fruit surrounded by floating flowers and their scents. "

Recipe espresso:
18.5 grams of coffee for the Quick 820 (finer ground)
25 - 27 seconds turnaround time
Between 40ml and 45ml of coffee.

Recipe filter:
20 grams of coffee. (coarsely ground)
300 grams of water.
2:40 - 3:00 turnaround time.
