I have been a coffee roaster for more than 30 years, from the Dutch family business Boot Koffie, from Baarn. The smell and taste of specialty coffee from special arabica coffee bushes can be impressive, overwhelmingly smooth, powerful and moving. To live that experience and to experience the richness of stories of coffee farmers and their pickers, and to realize the inspiration of coffee roasters and baristas, is what I want to convey to coffee drinkers.

Yesterday in the webinar on Best of Panama coffee, I saw again some of Panama's most famous coffee farmers. It felt a bit like "coming home" to me: coffee mother Maria Ruiz, looking so beautiful and talking about the sound of the coffee berry that the picking experts of the Ngobe Bugle Indians can hear. We recommend that you store the coffee in the original Boot packaging, or in an airtight canister, in a cool and dry place. Press the closing strip on the Boot 250 gram package firmly shut. Do you use a Boot kilo bag? Then roll the kilo bag up to where the beans are and put a clamp on it. Wash out an airtight canister regularly to remove old odors. Make sure the coffee does not come into contact with other foods or moisture, as it absorbs odors quickly.

Ratibor and Tessie of Finca Hartmann are a couple and have just won first prize in "the Best of Panama" of the Geisha Natural. For years they seemed to keep a little distance from the coffee competitions. They are incredibly humble, introverted and very hardworking people.
